Keto Muffins Recipe


Coconut and Almond Flour Muffin decorated with delicious blackberries.


Ingredients:

* 3 eggs.
* 1/2 cup monk fruit sugar or erythritol.
* 1 tablespoon of baking powder.
* 1/2 cup melted butter.
* 75 grams of almond flour.
* 75 grams of coconut flour.
* Shredded coconut to taste (optional).
* 1/2 teaspoon vanilla.
* 1 pinch of salt
* 1/2 cup of blackberries
* 1/4 cup of almond or coconut milk.

                Preparation:

  • In a bowl that is not too small, beat the eggs with the sugar until it reaches stiff peaks.
  • Add the salt, vanilla and butter to the mixture and beat again.
  • Add the rest of the ingredients (except the blackberries), beat again until everything is well blended and let stand for a few minutes.
  • Grease the muffin tins with butter and pour the mixture.
  • Place the blackberries on the top by sinking them a little.
  • Bake for 15 minutes or until golden brown.
  • .Decorate to taste.
