Light Turkey Stuffing Recipe (Low Calorie)


When Christmas arrives, many of us are filled with the spirit of joy and harmony that characterizes this beautiful season of the year. The family reunion is one of the most awaited traditions of thanksgiving and with it the famous Christmas dinner.

Among the most prepared and of course traditional thanksgiving meals, turkey is in the first place of many families, whose meat is quite low in fat, depending on how it is prepared, it can become a recipe high in calories and fat.

There are many people who do not even give a taste of turkey thinking that it is loaded with many calories and fat caused by the stuffing, but with this recipe you do not have to be afraid that your guests will take a little dread to your rich thanksgiving turkey.

RECIPE:

Turkey Stuffed Light (Low Calorie)

Ingredients:

1 turkey of approximately 5 kilos with bone or boneless.
300 grams of green apples.
150 grams of peaches.
1 medium carrot.
100 grams of chestnuts.
2 slices of whole wheat bread.
2 tablespoon of olive oil.
2 leeks.
1 celery stalk.
1 lemon.
2 cups of light chicken broth.
2 spoonfuls of light strawberry or raspberry jam.
100 grams of sucralose
1 tablespoon of sunflower oil.
Soy sauce (sufficient quantity).
Skimmed milk (sufficient quantity).
Salt, pepper, nutmeg, cinnamon to taste.

Preparation:

Prepare the turkey the day before dinner.
  • Wash the turkey well on all sides. 
  • Cut the lemon and sprinkle all the inside of the turkey with the juice.
  • Season the turkey with salt and pepper both inside and outside.
  • With a kitchen syringe inject the entire turkey breast and thighs with the soy sauce.
  • Let stand overnight in the refrigerator (not in the freezer).
Stuffing:

  • Peel and cut the apples, carrots and peaches into cubes.
  • In a bowl soak the bread and skimmed milk and add the chestnuts, a tablespoon of olive oil and the soy sauce, stir and add the ingredients that we had cut into cubes.
  • Add salt and pepper to taste.
  • Turn on the oven to (160 - 165 degrees Celsius or 325 degrees Fahrenheit): 
  • Take the turkey out of the fridge give it a few brush strokes with the remaining tablespoon of olive oil and salt and pepper to taste.
  • Then stuff the turkey and tie the open parts so that the stuffing does not come out during cooking.
  • Cut the celery and leek into strips and season with salt and pepper, place them in a baking dish and then carefully place the turkey on top.
  • Place the baking dish in the oven and bake for approximately 3 hours.
  • In a bowl place the chicken broth and soy sauce mix and spread all over the turkey when it begins to take color and from time to time so that the turkey does not dry out.
  • To caramelize the turkey, place the sunflower oil and sucralose in a pan on the fire until it takes a golden color.
  • Then paint the turkey with this caramel 15 minutes before the end of cooking.
  • Remove the turkey from the oven and let it rest for approximately 15 minutes.
Sauce
  • Scrape and drain well all the juice from the pan where the turkey was baked, pour it into a pot, add a little chicken broth, take it to the fire and cook it over low heat for 5 minutes, turn it off, add the light marmalade and a little soy sauce.

  • NOTE:

    • At first glance it may seem that this recipe contains many calories per serving but this is not true considering that when you buy this recipe with a normal Christmas turkey recipe, the calories increase by almost 50%.
    • It is very important to highlight that if you consume only the turkey breast without the stuffing, the calories will drop by a large percentage, reaching 300 calories per serving.
